Design own theme

What is the best way (little help) to design an own theme? Which files are to change? What belongs all to a theme?

First we want to change only some icons...

You have to copy the default folder in public/assets/themes and give it a new name for your theme. Now change anything you like in that folder. Icons are placed in the images folder.
