Can anyone tell me what capabilities for revision control these OS word processors and spreadsheets have?  Maybe, what is the file format?

The first version will use the same version system included with ActiveCollab. Currently, when you decide to save changes to a document you will have the chance to generate a revision or not.
The supported file format are:
- html for documents
- trim-spreadsheets ("adapted" html) for spreadsheets
- S5 ("adapted" html) for presentations
As you might have noticed, we are currently developing some of these features and testing others.
In the near future we hope to find collaborators to work on exporters for a variety of open formats (i.e. ODF and PDF for instance) or even closed formats (MS Office ones). Currently we are researching the web trying to find modules useful to do html -> ODF conversions.
Ideas are welcome.

Maybe we could use subversion for version control. Any thoughts on that?

I think subversion is not an option for "cheap hosting" users. Drupal has a good solution for version control of "nodes" and files.
